Salisbury Steak

Salisbury Steak over wagon wheel pasta, green peas, Orange Fluff Salad

Salisbury Steak
1 pound ground beef, flattened into patties
1 onion, sliced
1 can Cream of Mushroom soup
1/2 C sour cream
1/2 C milk
Fry ground beef patties with onion rings. When completely cooked, add remaining ingredients. Cook until thick and bubbly. Season with salt and pepper. Serve over pasta.

Orange Fluff Salad
1 small tub Cool Whip
1/4-1/2 package orange flavored gelatin
1 C cottage cheese
1/2 can crushed pineapple
1 small can Mandarin oranges
Combine Cool Whip and gelatin. Add remaining ingredients. Stir gently and refrigerate. Extra Mandarin oranges may be used to garnish the top of the salad.

Prep and Cooking time was only 25 minutes. This included setting the table and putting away some groceries as well. Although the kids hate onions, the rest of the meal went down well. It is inexpensive with lots of leftovers for lunches the following day. This salad is an easy (although fairly sweet) way to add both Vitamin C and protein to a meal. My children love it! (And although I hate to brag, I am the Queen of fluff salads- even by Utah standards. Watch for many more fluff salad recipes in the future.)
