Omelets- Thursday

MENU:
Ham and Cheese Omelets, cantaloupe, blueberry muffins, orange juice

RECIPE:
I would love to have a homemade blueberry muffin recipe. I have tried adding blueberries to a regular muffin mix but it never tastes good.

I do have one tip for omelets that I got off of a cooking show. Use water instead of milk and tabasco sauce instead of pepper. I also found these two links online but every site makes omelets differently and they all seem to disagree on the best method.

REVIEW:
Obviously, I am trying to use up Tuesday's ham. I am a terrible omelet maker. The inside is always runny and the outside is overcooked. The cheese didn't melt and the ham was cold. Both kids just had scrambled eggs instead. The fresh fruit was a big hit, though.

I have to agree with the omelet thing...I've given up on them entirely. Instead I either do just scrambled eggs, or something we call egg bake...whis is sort of like a crustless quiche. You basically beat about 4-6 eggs, throw in about a cup of grated cheese, and a little soy or cow's milk, and then add whatever else you want. You bake in a casserole dish for about 30 minutes at 350 degrees. We make it with salsa, olives, peppers, spinach, cottage cheese, potatoes, and just about any king of leftover meat. My kids like it and so does my hubby.
