Spring BBQ

ORIGINAL MENU:
Low Fat Chicken Roll-ups

My husband came home today with spring fever. I had planned to cook low fat chicken roll-ups but those went out the window in trade for a spring BBQ. The weather was beautiful. I made my pistachio fluff salad (which the cat enjoyed tremendously) and pasta salad. We ate bratwurst, soda pop and chips. Then we roasted "marshmelons." So much for the diet!

RECIPE:
Easy Pasta Salad
1 C Italian salad dressing
8 ounces rainbow rotini, cooked and drained
18 black olives, halved
1 small tomato, diced (optional)
Combine all ingredients. (I tried this recipe by substituting low-fat dressing and I didn't like it.)
