Carne Asada Burrito with guacamole, fresh salsa, sour cream and lettuce; Mexican rice, refried beans
Carne Asada Burrito
4 gordita style tortillas
4 thinly sliced steaks
2 C grated cheese (I use whatever is on hand but a mixture of Colby and Monterey Jack is best)
Slice the steaks into strips and fry in very hot oil. Divide the meat mixture between the 4 tortillas. Top each pile of meat with 1/2 C cheese. Heat in the microwave just until the cheese melts. Roll each tortilla. Serve with sides of guacamole, fresh salsa, sour cream and lettuce.
1 small avacado, ripe
1 T sour cream
1 t dried red chiles
juice of 1/2 lime
Peel the avacado and discard the pit. Combine remaining ingredients in a food processor and purree until smooth.
Easy Mexican Rice
Combine 2 C cooked rice with 1/2 t garlic salt and 1 small can of tomato sauce. Heat thoroughly. Don't add any other spices- it should be a mild contrast to the rest of the meal.
When I made up these recipes, I was trying to duplicate a meal that we get at a local Mexican restaurant. It was quite similar and tasted delicious. I did cheat a bit. This time I used vegetarian refried beans out of a can. I had already made homemade salsa, homemade guacamole and homemade burritos and I was tired. I also used a rice cooker which shortened my kitchen prep time.
P.S. I discovered that my baby LOVES refried beans!
