Chicken Scallopini

Chicken Scallopini
1 split chicken breast
1 1/2 C spaghetti sauce
4 thin slices Provolone
10 Ritz crackers
2 pieces dry bread
6 garlic croutons

In a food processor, combine crackers, croutons and dry bread until a fine texture is achieved. De-bone and skin the chicken breast. Pound very thin with a mallet. Slice into four servings. Wet each piece of chicken in water and roll in the dry bread mixture. Bake at 375 degrees, in a dish that has 2 inch sides. Remove chicken from oven JUST BEFORE the juices run clear. The cooking length varies on how thinly you have pounded the servings. Pour the spaghetti sauce around the chicken and return to the oven. Cook until hot and bubbly. Top each piece of chicken with a slice of Provolone. Turn off oven. Put the chicken back in the oven until the cheese is melted. Serve over linguine noodles.
