Chicken Pizza

Chicken Pizza, fresh peaches

Chicken Pizza
Boboli pizza crust
1 C BBQ sauce
2 T honey
1/4 C brown sugar
1 C cubed, cooked chicken
2 C grated mozzarella cheese
Mix BBQ sauce, honey and brown sugar in a microwave safe bowl. Cook on 70% power for five minutes. Add chicken. Cook at 70% power for five additional minutes. Top Boboli crust with chicken and sauce mixture. Sprinkle generously with grated cheese. Cook at 400 degrees until cheese is melted.

My first mistake was calling this dish "pizza." My children were expecting bread dough slathered in red sauce and covered with cheese. Personally, I thought it was a wonderful change. I will definitely make this again (though maybe for a dinner party where only adults are invited!)

I am in love with chicken pizza! I love it best with a ranch base instead of a red sauce... but I never thought about using BBQ... hmm, maybe I'll try it!

My children are allergic to ranch dressing (they break out in red blotches) but ranch sounds yummy....
