Grilled Chicken, Spinach Fettucini, sliced peaches, milk, Quick Chocolate Bavarian
4 ounces cooked and drained fettucini noodles
2 C fresh spinach, washed and chopped
1 can cream of chicken soup
1/2 C milk
1/2 C cubed mozzarella cheese
salt and pepper to taste
Combine soup, milk and cheese. Cook until cheese has melted. Add salt, pepper and spinach. Cook 5 minutes over medium heat, stirring frequently until spinach has softened. Add fettucini noodles. Heat thoroughly. Serve with grilled chicken breasts.
My 7 year-old LOVES pasta and has requested that I make this dish again. It was fairly easy to make and yet still rather fancy.
