Orange Cashew Chicken, steamed rice, Pina Colada Sorbet
Orange Cashew Chicken
2 T margarine
1 pound chicken tenders, cut into 1 inch pieces
1/2 C celery, sliced
1/4 C thinly sliced onion rings
1 can cream of chicken soup
1/2 C orange juice
pepper, to taste
nutmeg, to taste
3/4 C chopped cashews
1 can mandarin oranges
2 T honey
Fry chicken pieces in 1T margarine for about 5 minutes. Remove from pan. Saute celery and onion in 1T margarine for 5 minutes. Add soup, OJ, spices and nuts. Cook 5 minutes (medium heat.) Add chicken, oranges and honey. Mix well and simmer 5 minutes. Serve warm over rice.
Pina Colada Sorbet
2 C frozen pineapple with juice
5 T coconut milk
2 T sugar
Combine all ingredients in a food processor until well mixed. Freeze until ready to serve.
I loved the chicken. It was like eating a light curry dish without the yucky curry flavoring. My kids hated it but my husband liked it. I actually got the recipe out of a 30 Minute or Less Cookbook by the California Cookbook Company. I only changed a few things :-)
I was surprised that my children loved the sorbet since they hate pineapple and coconut. They asked for seconds.
