Danish Ebleskiver

My husband wanted to make something fancy for breakfast this past weekend so I let him!

Danish Ebleskiver
2 C buttermilk
2 c flour
3 eggs, separated
1 t baking soda
1 t baking soda
1/2 t salt
2 T sugar

Beat egg yolks. Add sugar, salt and milk. In a separate bowl, sift together: flour, baking soda and baking powder. In a third bowl, beat egg whites until stiff. Add flour to egg mixture and mix thoroughly. Fold in egg whites.

Heat ebleskiver pan on medium low. Place a small amount of butter or margarine in each depression. When fat is bubbly fill each hole 2/3 full of dough. Cook until bubbles appear. Turn carefully with a fork. Cook on reverse side.

Dip in melted butter and powdered sugar.

My children LOVED these. Both have requested them for breakfast on their birthdays.
