Roast and Yorkshire Pudding

Crock pot roast with mushrooms, steamed artichokes and Hollandaise sauce, Yorkshire pudding, cheesecake

Yorkshire Pudding
1 1/2 C flour
3 eggs
2 t salt
1 1/2 C milk
1/2 C roast drippings (add shortening or butter to make 1/2 C)
Grease 10-12 muffin tins. Spoon 1 T of drippings into each tin. In a large bowl, mix remaining ingredients well. Divide batter evenly among muffin tin sections. Bake at 425 degrees for 25-30 minutes. Do not burn!

This meal was a great success. Of course, you have to ignore the fact that I forgot to grease the muffin tins (that was messy.) I also tried to put too many artichoke leaves down the garbage disposal (unclogging the sink in my Sunday dress was quite gross.) I tipped the crock pot over and got broth all over the counter (that wouldn't have been so bad if it was my only problem.) Then the roast sat on the table and dried out while I tried to unclog the drain. My ever-sensitive husband tried to console me by pointing out that at least I didn't start the kitchen on fire.
