Soaked Wheat

Tonight we had soaked wheat cereal for dinner. My mother used to make it all the time but I have never made it for my kids. I love it but my children were completely unimpressed. It is an easy way to use whole grains and requires very little preparation. The fresh peaches and grape tomatoes were from Grandma's garden. August is a wonderful time for fresh produce in Utah. Even if you don't grow your own, you can usually find a local family with surplus.

Menu:
Soaked wheat cereal, fresh peaches, grape tomatoes

Recipe:
Soaked Wheat Cereal
Soak 1 cup wheat in 3 cups water, overnight. Drain and rinse. In a saucepan, combine soaked wheat with enough water to completely cover the wheat. Bring to a boil. Reduce heat, cover and simmer until soft. Drain. Serve with milk. Drizzle honey on top.
