For breakfast this morning, we had Apple Cinnamon Pancakes.
I kinda cheated today because we were rushed for time. (My husband had to leave on a business trip.) I used whole wheat pancake mix from the store and just added apples and cinnamon. Slice and peel the apples. I use about a 1/4 C per person. Dice the apples and steam them in a small amount of boiling water until softened. Add the apples to mixed pancake batter. Sprinkle with a dash of cinnamon. Cook as you would cook regular pancakes. Serve topped with applesauce (I use organic non-sweetened whenever possible.)
