Artichoke Chicken

Combine the following ingredients in a saucepan and cook over medium heat, stirring frequently, until smooth:
1 C mozzarella cheese, grated
1 C sharp cheddar cheese, grated
1 can cream of celery soup
1 C milk
1/4 C real mayonnaise
1/4 C sour cream
2 T grated Parmesan cheese

Add the following items to the saucepan and cook until heated:
1 large tomato, diced
1 jar marinated artichoke hearts

Serve over cooked, hot fettuccine noodles with grilled chicken breast (sliced diagonally) on the top.

I was at the grocery store and my oldest daughter was home babysitting. I had only gone down two aisles when my cell phone rang. It was my middle child informing me that I needed to come home immediately because the baby had just thrown up all over the kitchen. I grabbed the ingredients for this dish (which I made up on the spur of the moment) and ran through the express lane. I was surprised at how wonderful the dish turned out. I will definitely make this in the future. I might try substituting shrimp for the chicken...
