I really like this salad! This serves one person since I usually eat it for lunch (no one else in my family will eat fish willingly.)
Ingredients needed: salmon fillet, whole wheat rainbow rotini, fat free yogurt, dried dill, sea salt, mixed baby greens, grape tomatoes, mayonaise (optional)
Cook the salmon and boil the noodles. Let both cool. Combine 1/2 c yogurt with 1/2 T dill and 1 T mayo, if desired. Add noodles and grape tomatoes. Coat well. Serve over a bed of baby greens. Top with the salmon fillet and enjoy!
