You might be aware that I am on the founding board of Quail Run Primary School. We have submitted an application to the State of Utah to be allowed to open a charter school. Part of the charter describes our commitment to the National School Lunch Program as well as our dedication to healthy food choices. This is an ambitious goal even with my experience with the NSLP, a health and wellness coach on our founding committee, as well as a registered dietitian on our committee.
I have spent quite a lot of time lately trying to find standardized recipe ideas that fit both goals. Believe it or not, school lunch is not the healthiest option. Here are a few of the goals we have for the program:
Local farmers and suppliers
Limited salt, high fructose corn syrup, added sugars, MSG, etc.
Increased fresh fruits and vegetables
Student input on menu choices
Student involvement in preparation
